Recipe - Apple Cocoroon Pudding

4 Tart apples
1 teaspoon Cinnamon
One fourth cup Sugar
1 Egg
1 teaspoon Vanilla
One half cup Bisquick
1 tablespoon Margarine
One half cup Shredded coconut
One half cup Sugar

Preheat oven to 350. Slice peeled apples into a shallow 8 inch baking
dish. Sprinkle with the One fourth cup sugar and cinnamon combined. Place in hot
oven. Meanwhile beat egg, add sugar, then vanilla. Stir in Bisquick, then
melted marg and coconut. Spread over hot apples and bake 2530 minutes
until apples are tender and topping is nicely browned. I double this
recipe. It's also good with fresh peaches.
