Recipe - Apple-Raisin Cake

2 Eggs
1 One half cup Sugar
1 cup Oil
2 cup Flour
2 teaspoon Vanilla
1 teaspoon Salt
1 teaspoon Baking soda; (bicarbonate)
One half cup Raisins; up to 1
1 cup Chopped nuts; (optional)
4 lg Apples; peeled and minced .
Recipe by: Merle Gutkin (my sister in London)
(Preheat oven to 325 deg. F.)
1. Beat eggs, sugar & oil.
2. Add baking soda, flour, salt.
3. Stir in presoaked raisins and apples. (soak raisins in boiling water or
liquer of your choice for about One half hour, then drain.)
4. Pour into greased, shallow pan, bake at 325 deg. F. 45 minutes 1 hour.
