Recipe - Amish Buttermilk Biscuits

3 cup Flour
One fourth cup Instant lowfat dry milk (I
Used nonfat)
1 tablespoon Baking powder
2 tablespoon Sugar (I used less)
1 teaspoon Salt
2 teaspoon Cream of tartar
One half cup Cold butter in pieces
One half cup Cold lard
14 tablespoon Cold buttermilk
Pulse the dry ingredients with the butter and lard until grainy, NOT
blended! Add the cold buttermilk, and mix until the dough comes
together.
Place dough on a floured cloth or marble slab, and knead a few times
with floured hands. (Keep the dough cold!) Pat or roll out to
3/4inch thick, and cut out biscuit rounds or shapes. (You can use a
cookie cutter!)
These biscuits can be frozen ahead, or baked immediately.
Baking time: Bake at 400 degrees F for 1315 minutes if fresh, and
1518 minutes if frozen.
