4 Fillets American grouper; (8
ounce)
Salt and pepper to taste
1 cup Toasted corn meal
1 tablespoon Olive oil
Relish
Plum Sauce
Dill for garnish
RELISH
One fourth cup Blanched lemon zest
One fourth cup Julienne jalapenos
2 cup Julienne carrots
2 cup Julienne fennel bulbs
One half cup Rice wine vinegar
One fourth cup Olive oil
PLUM AND LEMON JUICE WITH DI
8 Plums; Juice of
1 Lemon; Juice of
1 tablespoon Minced; fresh dill
Season fillets of grouper with salt and pepper and coat with corn
meal. In a saute pan heat oil, and saute grouper for 3 minutes on
each side, or until done.
Relish:
Combine all ingredients and season to taste with salt and pepper.
Plum and Lemon Juice with Dill:
Combine and spoon over grouper.
