Recipe - Ambrosias Famous Christmas Cake

4 cup All purpose flour
2 teaspoon Nutmeg
2 teaspoon Cinnamon
1 teaspoon Baking soda
1 teaspoon Ground cloves
1 teaspoon Brandy extract and/or
One fourth cup Brandy
1 cup Sweet shredded coconut
1 cup Golden brown sugar
1 cup Dark old fashioned brown
sugar
1 pound Unsalted butter
Three fourths cup Pineapple wedges
Three fourths cup Mixed fruit
Three fourths cup Lexia raisins
Three fourths cup Thompson raisins
Three fourths cup Golden raisins
Three fourths cup Chopped dates
Three fourths cup Chopped pecans
Three fourths cup Sliced blanched almonds
Three fourths cup Chopped walnuts
One half cup Citron peel
One half cup Orange and lemon peel
One half cup Assorted melon cubes
One half cup Glace cherries
One half cup Green cherries
One half cup Currants
One half cup Blackstrap molasses
One half cup Pure apple juice
12 Egg yolks
12 Egg whites
Mix fruit with 2 cups flour mixture. Heat oven to 275 degrees. line with
wax paper and grease 6 loaf pans 8" x 4 1/2" X 2 1/2" deep. Beat butter and
brown sugar until fluffy. Mix in egg yolks. Then mix in alternately just
until smooth remaining flour mixture, juice and molasses. Turn into a large
container and stir in fruit mix by hand. beat egg whites until soft peaks
are formed and fold in to mixture.
Bake for approximately 2 hours. yields 6 loaves Wrap well in foil. Can add
brandy or rum at intervals.
Decorations: Pineapple rings, maraschino cherries,pecans and or walnut
halves marzipan, etc....
