Recipe - Ambrosia Fruit Custard

1 pack (4serving size) instant
vanilla pudding
(ingredients for pudding)
1 teaspoon Lemon zest
1 tablespoon Lemon juice
One half teaspoon Coconut or almond extract
1 cn (8 oz.) pineapple tidbits in
juice; drained
1 cup Assorted cut or sliced up fresh fruit
One fourth cup Mini marshmallows or flaked
coconut

Make pudding according to package directions in bowl. Stir in lemon zest,
lemon juice and coconut extract. Reserve One fourth cup pudding for topping. Spoon
remaining pudding equally into dessert bowls. Combine remaining ingredients
in bowl. Spoon on top of pudding. Top with reserved pudding. Makes 4
servings.
