Recipe - Amaretto Rice Pudding

Ingredients:

1/3 cup Dried peaches; chopped
2 tablespoon Amaretto; plus 2 teaspoons
1/3 cup White rice; uncooked
2 2/3 cup Evaporated skim milk
1 One fourth teaspoon Unsalted butter
2 tablespoon Sugar; plus 2 teaspoons
2 Eggs; beaten
Cinnamon
Nutmeg

Soak the peaches in the Amaretto for 10 minutes. Set aside. Combine the
rice, milk, butter, and sugar in a saucepan. Bring to a boil, lower the
heat, and cook until the rice has absorbed the milk but the mixture is
creamy, about 1520 minutes. Stir constantly so the milk does not curdle.
Add the peaches and cook 1 more minute. Remove from the heat and add eggs.
Return to the heat and cook for about 5 minutes until the mixture is
creamy. To serve, sprinkle individual dishes of rice pudding with cinnamon
and nutmeg.

Per serving: calories 335, fat 4.3g, 12% calories from fat, cholesterol
115mg, protein 17.5g, carbohydrates 51.4g, fiber 1.1g, sodium 229mg.
