Recipe - Almond And Tomato Bites

1 md Onion; finely chopped
1 small Clov garlic; finely chopped
2 tablespoon Vegetable oil
8 ounce Tomatoes; skinned and
chopped
4 ounce Almonds; ground or coarsely
; crushed
6 ounce Wholemeal breadcrumbs
Salt and freshly milled
black pepper to
; taste
Freshly chopped parsley to
garnish
1. Saut‚ the onion and the garlic in the oil in a pan until softened.
2. Add the tomatoes and cook for another 5 minutes.
3. Pour the mixture into a bowl and add the almonds and breadcrumbs.
4. Mix well. Season to taste with salt and black pepper.
5. Form the mixture into small, bitesize balls. Arrange on serving
plate and cover them with masses of chopped parsley.
