Recipe - Alligator Meatballs

1 pound Alligator meat; chop
1 Egg
1 tablespoon Onion; chop fine
2 tablespoon Celery; chop fine
1 tablespoon Parsley; chop fine
2 tablespoon Shallots; chop fine
2 teaspoon Lemon pepper
One half teaspoon Salt
One fourth cup Bread crumbs
Flour to dredge
1 cup Cooking oil

Mix all ingredients, form into 1" balls. Allow to set for 1 hour. Dredge
with flour and fry until brown. Serve hot. Source: Louisiana Seafood & Wild
