Recipe - Ajad (Fresh Cucumber Pickle)

4 tablespoon Rice vinegar
2 teaspoon Sugar
One half teaspoon Salt
1 ounce Cucumber; finely chopped
2 small Shallots; finely chopped
1 small Carrot; finely chopped
1 small Red or green chili
finely chopped
Mix all ingredients in a small bowl, stirring well until thoroughly mixed
and serve.
