Recipe - Aidells Sausage Hash

2 pound Red potatoes; cut 1/2" dice
1 lg Onion; cut 1/4" dice
One half Stick unsalted butter
4 Links AidellsŪ Cajun Brand
Andouille Sausage; cut 1/2"
dice
One half cup Red bell pepper; cut 1/4"
pieces
One half cup Green bell pepper; cut 1/4"
pieces
One fourth teaspoon Salt
One half teaspoon Black pepper
One fourth teaspoon Cayenne
Salt and pepper; to taste
One fourth cup Finely chopped green onions;
for garnish
In a heavy large frying pan, saute the potatoes and onions in the batter
over medium heat for 15 minutes, stirring occasionally. Add the sausage,
bell peppers, salt, black pepper and cayenne, and continue frying until the
sausage is browned, about 5 minutes. Add salt and pepper to taste and serve
garnished with green onions.
Can substitute New Mexico Brand Smoked Turkey and Chicken Sausage, Smoked
Spicy Santa Fe Brand Turkey and Chicken Sausage, Fresh Mexican Beef Chorizo
(removed from casing), Smoked Turkey and Chicken Sausage with SunDried
Tomatoes, etc.
