Recipe - Adrak Sharbat (Lime Ginger Ale)

30 g Peeled ginger root 1 oz
5 ml Peppercorns 1 t
500 ml Water 1 pt
500 ml More water 1 pt
500 g Sugar 18 oz
12 Limes; juice of
1 l Water or sparkling water 1

makes 2 qt or 2 L

Make a paste of the ginger. Add this paste and the peppercorns to 500 mL
water. Bring to a boil, reduce heat, simmer 5 min. Strain. Set liquid aside
and put solids back in the pan with more water. Bring to a boil, reduce
heat, simmer 5 min. Strain. Discard solids. Combine both liquids together
with sugar and lime juice. Chill.
To serve, dilute with an equal quantity of still or sparkling water and
serve over ice.
