Recipe - A Zingy Colourful Coleslaw

Categories: Jenny, Bristow's, Country, Kit, A Zingy Colourful Coleslaw
Ingredients:

One half small White cabbage; shredded
Few leaves red radicchio
lettuce
1 small Red onion
1 small White onion
1 Yellow pepper; roasted
1 Orange pepper; roasted

DRESSING
2 Dsp honey
2 Dsp lime juice
One fourth teaspoon Mustard
Salt and pepper

To prepare the vegetables for the coleslaw, slice the cabbage very
finely along with the red and white onions. Tear the red lettuce into
small pieces and mix with the other ingredients. Prepare the peppers
by cutting into strips, removing the seeds and grilling for 2 minutes
on either side. This improves and sweetens the flavour of the peppers.

Prepare the dressing, by mixing together the honey, lime juice, salt,
pepper and mustard until smooth and well blended. Pour over the salad
ingredients, toss well, then serve.
