Recipe - 9-Grain Bread

9 Grain Mix Makes 2 One fourth c
Makes 10c
Triticale flour
One half cup 2 c
Buckwheat groats or flour
1 Tbs One fourth c
Flax meal (grind flaxseed)
1 Tbs One fourth c
Millet (whole)
One fourth cup 1 c
Cornmeal
1/3 cup 1 1/3 c
Sunflower seeds
One half cup 2 c
Oats
One fourth cup 1 c
Soy flour
One fourth cup 1 c
Soy grits
1 One half Tbs 3/8 c
Mix these up and you're
ready to make bread!
Makes 2 1 One half pound loaves
2 1/3 cup Warm water
2/3 tablespoon Blackstrap molasses
1 Three fourths tablespoon Malt syrup
1 tablespoon Yeast
1 1/8 cup 9 grain mix
5 One half cup Hard whole wheat flour
1 teaspoon Salt
3 One half tablespoon Oil

THis bread will not only nourish you, it will surprise you with its unique
and delightful flavor and texture. Definetly worth the extra effort of
finding the 9grain mix ingredients. The mix will keep well in the
refrigerator we're sure you'll want to make this bread again (try a
handful in pancakes!).
Mix the water, molasses, malt and yeast. Add the 9 grain mix, flour, salt
and oil (you can also make a sponge and wait, but it's not necessary). Mix,
and knead dough well. Let rise, shape into loaves and let rise again in
oiled bread pans. Bake at 350 F for 45 min.
