Recipe - 20-Minute White Bean Chili

1 cup Chopped onions
1 Clove garlic; minced
1 tablespoon Vegetable oil
1 pound Ground turkey
1 cn Stewed tomatoes; (14 1/2
ounce)
1 cup Chicken broth or low sodium
chicken broth
One half cup Grey Poupon® Dijon Mustard
1 tablespoon Chili powder
1/8 teaspoon Ground red pepper; (up to
1/4)
1 cn Cannellini beans (15 ounce);
drained and rinsed
1 cn Corn (8 ounce); drained
Tortilla chips; shredded
cheddar cheese, and
Cilantro; optional
In 3quart saucepan, over mediumhigh heat, sauté‚ onions and garlic in oil
until tender. Add turkey; cook until done, stirring occasionally to break
up meat. Drain. Stir in tomatoes, chicken broth, mustard, chili powder and
pepper. Heat to a boil; reduce heat. Simmer for 10 minutes. Stir in beans
and corn cook for 5 minutes. Top with tortilla chips, shredded cheese and
cilantro, if desired.
