Ingredients:

Yield: 4 servings

4 cup Radiatore pasta [3/4lb]
3 tablespoon Olive oil
1 Onion; chopped
2 Garlic cloves; minced
1 tablespoon Dried thyme
1 tablespoon Dried oregano
10 ounce Fresh spinach; chopped
One fourth cup Stock vegetable or chicken
1 tablespoon Lemon juice
One half tablespoon Salt
One half tablespoon Pepper
One half cup Light cottage cheese

In large pot of boiling salted water, cook pasta for 810 minutes or
until tender but firm. Drain well and return to pot.

Meanwhile, in large skillet, heat 2 tablespoon of the oil over medium heat;
cook onion, garlic, thyme and oregano, stirring occasionally, for
about 5 minutes or until onions are softened.

Add to pasta along with remaining oil, spinach, stock, lemon juice,
salt and pepper; toss to coat well. Cook over low heat for about 4
minutes or until spinach is wilted. Stir in cottage cheese.
